Ingredients

1 can black beans , drained
1 tablespoon vegetable oil
1/2 onion , chopped
1 red bell pepper , chopped

1 mango - peeled , seeded and diced
6 flour tortillas
1 package shredded Cheddar cheese
1 cup arugula leaves
1 jar jalapeno pepper rings ( optional )
1 jar salsa

Instructions

1.Preheat the oven to 400 degrees F (200 degrees C).
2.In a large skillet, heat the vegetable oil over medium heat. Add the onions and red bell pepper and sauté for 5 to 7 minutes, or until the vegetables are soft and slightly caramelized.
3.Add the black beans, chili powder, cayenne pepper, dried oregano, and dried basil to the skillet. Cook for an additional 2 to 3 minutes, or until the beans are heated through.
4.Remove the skillet from the heat and stir in the diced mango.
5.Arrange the flour tortillas on a baking sheet. Spread the black bean and mango mixture evenly over each tortilla. Sprinkle the shredded Cheddar cheese on top of the black bean and mango mixture.
6.Bake the quesadillas for 10 to 12 minutes, or until the cheese is melted and the tortillas are crisp.
7.Remove the baking sheet from the oven and top each quesadilla with a few arugula leaves, jalapeño pepper rings, and salsa. Serve immediately.
