Ingredients

1 cup white sugar
1 tablespoon lemon juice
2 cups pureed mango
1 can sweetened condensed milk
2 tablespoons cornstarch
1 tablespoon rum ( optional )
1 cup evaporated milk
6 eggs , beaten
1 pinch salt

Instructions

1.Preheat the oven to 350°F (180°C).
2.In a medium saucepan, combine the sugar and lemon juice over low heat until the sugar dissolves and turns golden brown.
3.Pour the mixture into a round baking dish and swirl to coat the bottom evenly.
4.In a blender, puree the mango until smooth.
5.Add the sweetened condensed milk, cornstarch, rum (if using), evaporated milk, eggs, and salt into the blender and blend until well combined.
6.Pour the mixture through a fine-mesh sieve into the prepared baking dish.
7.Place the baking dish into a bigger dish and fill it with hot water until it reaches halfway up the sides of the baking dish.
8.Bake for approximately 1 hour or until the edges are set and the center is still slightly jiggly.
9.Let the pudding cool in the pan before serving. Once cooled, run a small knife around the edges of the dish to loosen the pudding, and invert onto a serving plate.
