Ingredients

1 -2 tablespoon oil
1 lb pork tenderloin , cut into 1/2 in thick strips
1 -2 tablespoon taco seasoning mix
1 small onion , sliced
1 cup fresh ripe mango , chunks
1 cup sour cream ( light is okay , do not use fat-free )
4 fresh minced garlic cloves , divided
1 small red bell pepper , seeded and sliced
4 flour tortillas , warmed
2 teaspoons minced canned chipotle chiles in adobo
1/4 cup minced fresh cilantro

Instructions

1.Heat oil in a large skillet over medium-high heat. Add pork strips and cook until browned on all sides, about 5 minutes.
2.Add taco seasoning mix, half of the garlic, onion, and red bell pepper to the skillet with the pork. Cook for another 5 minutes, stirring occasionally.
3.Add mango chunks and continue to cook until everything is heated through, about 3-5 minutes.
4.In a small bowl, whisk together sour cream, chipotle chiles, cilantro, and remaining garlic until combined. Serve with warmed flour tortillas and spoon some of the chipotle sour cream on top of the hot fajitas.
