Ingredients

4 egg whites
3/4 cup caster sugar
1 teaspoon vanilla essence
1 teaspoon white vinegar
1 teaspoon cornflour
1/2 cup flaked coconut
300 ml thickened cream
2 tablespoons passion fruit pulp ( from 2 passionfruit )
2 medium mangoes , thinly sliced
Mango Passionfruit Pavlova Roll is a dessert that is both delightful and refreshing. The combination of the golden meringue outside and soft and sweet filling inside is a perfect contrast. This dessert is ideal for summer days as it can cool you down. It’s very light and easy to make, and it a perfect centrepiece for any celebration. The marshmallow-like texture of the meringue, the creaminess of the whipped cream mixture, and the sweetness of the mango make it a perfect summer dessert.

Instructions

1.Preheat the oven to 160C Fan.
2.Line the base and sides of a 27cm x 37cm swiss roll tin with baking paper.
3.Beat the egg whites in a large bowl until firm peaks form.
4.Gradually add the caster sugar, beating well between each addition, until the mixture is thick and glossy.
5.Fold in the vanilla essence, white vinegar and cornflour.
6.Sprinkle the flaked coconut over the baking paper in the tin then spread the meringue mixture evenly over the top.
7.Bake for about 15-20 minutes or until lightly golden and set.
8.Remove from the oven and leave to cool for 2 minutes before turning out onto a sheet of baking paper. Peel off the baking paper and leave to cool completely.
9.Whip the cream and passion fruit pulp together in a medium bowl until soft peaks form.
10.Spread the whipped cream mixture over the meringue then arrange the sliced mango over the top.
11.Roll up from the short end to enclose the filling. Serve sliced, dusted with icing sugar.
