4 skinless , boneless chicken breast halves
2 teaspoons canola oil
1 large white onion , chopped
1 large Anaheim pepper , diced
1 jalapeno pepper , diced
2 tablespoons minced garlic
1 cup chicken stock
1 can peeled whole plum tomatoes
1 can tomato sauce
1/4 cup diced mango
1 large lime , zested and juiced
2 tablespoons chopped fresh cilantro
1 tablespoon Pasilla chili powder
1 tablespoon ground cumin
2 teaspoons sea salt
1 teaspoon ground black pepper
1 teaspoon white sugar
1/2 teaspoon ground cinnamon
16 corn tortillas

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Heat canola oil in a large skillet over medium-high heat.
3.Add onion, Anaheim pepper, jalapeno pepper, and garlic to skillet; cook until onions are translucent, about 5 minutes.
4.Place chicken breast halves into a baking dish; pour chicken stock over chicken.
5.Pour cooked onion mixture over chicken.
6.Drain plum tomatoes, reserving juice, and chop the tomatoes; add to baking dish along with reserved juice, tomato sauce, mango, lime zest and juice, chopped cilantro, Pasilla chili powder, cumin, sea salt, black pepper, sugar, and cinnamon.
7.Cover baking dish with foil.
8.Bake in the preheated oven for 45 minutes.
9.Remove foil and continue baking until chicken is no longer pink in the center, about 15 minutes more.
10.Shred chicken with two forks.
11.Warm tortillas in a dry skillet over medium heat until softened, about 30 seconds per side.
