Ingredients

2 cups 1/4-inch-diced fresh mangoes
2 cups orange juice
2 tablespoons extra-virgin olive oil
1 seedless cucumber , cut into 1/4-inch dice
1 small red bell pepper , seeded and cut into 1/4-inch dice
1 small onion , cut into 1/4-inch dice
2 medium garlic cloves , minced
1 small jalapeno pepper , seeded and minced ( optional )
3 tablespoons fresh lime juice
2 tablespoons chopped fresh parsley , basil or cilantro
Salt and freshly ground black pepper

Instructions

1.In a blender, combine 1 cup of the diced mangoes and the orange juice until pureed.
2.Add the olive oil, garlic cloves, lime juice, and half of the remaining diced mangoes to the blender and pulse until combined.
3.Pour the mixture into a large bowl and stir in the remaining diced mangoes, cucumber, red bell pepper, onion, jalapeno pepper (if using), and chopped herbs.
4.Season with salt and pepper to taste.
5.Cover and refrigerate for at least 1 hour or up to 24 hours before serving.
