Instructions

1.For the peanut sauce: In a bowl, mix the peanut butter, soy sauce, rice vinegar, garlic salt, brown sugar, sesame oil, and sriracha chili sauce. Gradually add water until the sauce reaches your desired consistency. Set aside.
2.In a separate bowl, mix the rice vinegar and sugar. Add the cucumber and carrots and toss to coat. Set aside.
3.Dip a rice paper sheet in warm water until soft, then place it on a damp towel. Arrange some lettuce, mango slices, avocado slices, basil, cilantro, cellophane noodles, and the pickled vegetables in the center of the sheet, leaving some space on each side.
4.Fold the bottom of the sheet up over the filling, then fold in the sides. Roll up tightly and repeat until all the filling is used.
5.Serve the spring rolls with the peanut sauce for dipping.
