200 g silken tofu
300 g mango pulp ( To ensure the best flavour , make sure the fruit is very ripe )
150 g sugar syrup
1 orange
200 g bananas
500 g fresh raspberries or 500 g frozen raspberries

This mango and banana tofu 'ice cream' with raspberry fruit leather is the perfect vegan dessert option. This dish is easy to prepare and requires minimal ingredients. Instructions

1.In a blender, combine the silken tofu, mango pulp, sugar syrup and juice from 1 orange. Blend until smooth and creamy.
2.Peel and chop the bananas. Add them to the blender and blend on high speed until smooth.
3.Pour the mixture into a baking dish and freeze for at least 3-4 hours.
4.Meanwhile, preheat your oven to 140°C.
5.In a blender, puree the raspberries along with some sugar (if required) until smooth. Line a baking tray with parchment paper and pour the raspberry puree over the parchment paper. Spread evenly and place in the preheated oven for 2-3 hours, until it is completely dry and can be peeled off the parchment paper.
6.Once the ice cream is set, scoop it out and serve in bowls topped with the raspberry fruit leather.
