Ingredients

4 cups vegetable oil , for frying
1/3 cup granulated sugar
1 large mango , ripe but firm
1 large banana , ripe but firm
1/2 cup coconut , shredded sweetened

Instructions

1.In a wok or deep frying pan, heat vegetable oil over medium heat.
2.Add granulated sugar and stir until sugar is dissolved.
3.Add mango and banana, and stir fry for 1-2 minutes until slightly softened.
4.Add shredded coconut, granulated sugar, brown sugar, and ground ginger.
5.Stir until the mixture is evenly coated.
6.Remove the mixture from the heat and let it cool.
7.Preheat the oven to 375°F.
8.On a flat surface, lay out a spring roll wrapper.
9.Add about 2 tablespoons of the mango and banana mixture onto the center of the wrapper.
10.Roll the wrapper, starting with the bottom edge, and tucking in the sides as you go.
11.Use egg white to seal the edges of the spring roll.
12.Repeat the process with the remaining wrappers and filling.
13.Brush the spring rolls with egg white and bake for 15-20 minutes, or until golden brown.
14.Dust the spring rolls with icing sugar and serve with mango puree, coconut, ginger ice cream, or sliced kiwi fruit (optional).
