Ingredients

1 cup rice
1 red bell pepper , diced fine
1 green bell pepper , diced fine
1 onion , diced fine
125 g ham , diced fine
2 cans mandarin oranges
6 -8 ounces mayonnaise
4 tablespoons soy sauce
3 -4 tablespoons sugar
Mandarin Pepper Rice Salad is a refreshing and colorful salad that is perfect for warm summer days. This delicious salad is made with freshly cooked rice, diced bell peppers, onions, ham, mandarin oranges, and a flavorful soy sauce dressing. Instructions

1.Take 1 cup of rice and rinse it with cold water until the water runs clear. Drain the rice and put it in a pot with 2 cups of water. Bring it to a boil over high medium heat, stir the rice once, then reduce the heat to low and cover your pot with a lid. Cook for 18-20 minutes.
2.In the meantime, prepare the vegetables. Cut 1 red and 1 green bell pepper, and 1 onion into small dice. Set aside.
3.Open 2 cans of mandarin oranges and drain the juice. Set aside the oranges.
4.When the rice is cooked, remove it from the heat, and fluff it with a fork. Let it cool for a few minutes.
5.In a small bowl, mix 6-8 ounces of mayonnaise, 4 tablespoons of soy sauce, and 3-4 tablespoons of sugar to make the dressing.
6.In a large bowl, add the rice, vegetables, ham, and mandarin oranges. Mix well.
7.Pour the dressing over the salad and stir until well combined. Chill for 30 minutes before serving.
