Ingredients

1 1/2 lbs lean lamb , boneless shoulder cut into 1/2 inch strips
1/4 teaspoon garlic powder ( or 1 clove fresh garlic , minced )
2 tablespoons butter or 2 tablespoons margarine
1 medium onion , chopped
1 cup water
1 1/2 cups water
1/2 teaspoon salt
1 cup uncooked instant brown rice
1/4 cup water
3 tablespoons soy sauce
2 tablespoons cornstarch
1/2 teaspoon salt
1/4 teaspoon pepper
1 medium green pepper , cut into rings
1 can mandarin orange segments , drained

Instructions

1.In a large pan, cook the lamb strips until browned. Remove and set aside.
2.In the same pan, sauté the garlic, onion, and green pepper until tender.
3.In a small bowl, whisk water, salt, pepper, soy sauce, and cornstarch. Add the mixture to the pan and bring to a boil. Stir in the lamb and mandarin oranges.
4.Reduce heat and simmer for another 5 minutes, stirring occasionally.
5.In a separate pot, cook brown rice according to instructions.
6.Serve the lamb stir-fry over the cooked rice.
