Ingredients

100 g blanched almonds
100 g peeled pistachios
100 g shelled skinned peanuts
100 g raisins
100 g sesame seeds
1 lb ancho chili , seeded and deveined
1 lb pasilla chile , seeded and deveined
2 corn tortillas
1/2 mexican bolillo bread
1/4 lb lard
1 turkey , in pieces
2 cups turkey broth
1/2 fresh peeled pineapple , in chunks
5 apples , peeled and chopped
1 onion
5 garlic cloves
2 pieces mexican chocolate ( or more according to your taste )
1 peeled and sliced plantain

Instructions

1.In a dry, hot skillet, roast almonds, pistachios, peanuts, raisins, sesame seeds, ancho chili, and pasilla chili until golden brown.
2.Cut tortillas and bolillo bread into small pieces. Fry in lard until crispy. Set aside.
3.In the same lard, fry turkey pieces until browned. Set turkey aside.
4.Add onion and garlic to the lard and fry until fragrant. Add roasted ingredients and 1-2 cups of water. Let simmer until mixture is softened.
5.Add mixture to a blender and blend until smooth. Strain chile sauce and return to skillet with turkey broth and turkey pieces. Simmer until turkey is cooked through.
6.Add fresh pineapple, chopped apples, and sliced plantain. Cover and let simmer until fruit is tender.
7.Add Mexican chocolate and crispy tortilla and bread pieces. Cook until chocolate is melted and sauce thickens.
