Stock :
1 gallon water
3 cups tomato sauce
1 yellow onion , quartered
3 cloves garlic , minced
1 tablespoon dried oregano
Meatballs :
3 pounds lean ground beef
3 eggs
1/2 cup tomato sauce
1/4 cup uncooked white rice
1/4 cup chopped fresh cilantro
1 tablespoon dried oregano leaves
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon ground black pepper
1/4 teaspoon ground cumin
10 small baby potatoes
5 large carrots , sliced diagonally
5 stalks celery , sliced diagonally
2 zucchini , chopped
2 cups thickly shredded green cabbage
1 lemon , sliced into wedges ( optional )
2 avocados , chopped ( optional )
1/4 cup chopped fresh cilantro ( optional )

Instructions

1.Preheat oven to 350°F.
2.In a large pot, combine water and tomato sauce. Add quartered onion, minced garlic, and dried oregano. Set aside and bring to a boil over high heat.
3.In a separate bowl, mix together ground beef, eggs, tomato sauce, uncooked white rice, chopped fresh cilantro, dried oregano leaves, onion powder, garlic powder, ground black pepper, and ground cumin to form the meatballs mixture.
4.Shape meatballs into 1-inch balls and place on a non-stick baking sheet. Bake for 15-20 minutes.
5.Once the soup is boiling, add baby potatoes, sliced carrots, sliced celery, and chopped zucchini. Reduce the heat to medium and let the vegetables cook for 15 minutes.
6.Add the baked meatballs and shredded green cabbage. Stir well and let the soup cook for another 10 minutes.
7.Serve the soup hot with lemon wedges, chopped avocados, and fresh cilantro leaves on top (optional).
