Ingredients

2 lbs eggplants , peeled and sliced
2 large potatoes , peeled and thinly sliced
3 tablespoons olive oil
2 medium onions , sliced
1 lb ground beef or 1 lb lamb
1 can diced tomatoes
1/2 teaspoon cinnamon
1/2 teaspoon oregano
1 dash salt
1 dash pepper
3 ounces butter
4 teaspoons all-purpose flour
2 cups warm milk
1 dash nutmeg
1 dash salt
2 ounces grated cheddar cheese

Instructions

1.Preheat oven to 375°F/190°C.
2.In a large skillet, heat 2 tablespoons of olive oil on medium-high heat.

4.Remove the eggplants and potatoes from the skillet, and add in the remaining tablespoon of olive oil.
5.Cook onions in the skillet until they are softened.
6.Add ground beef or lamb to the skillet and cook until browned, stirring occasionally to break up any clumps.
7.Add canned diced tomatoes, cinnamon, oregano, salt, and pepper to the skillet.
8.Allow the mixture to simmer for 10-15 minutes.
9.Layer a 9x13-inch baking dish with half of the eggplant and potato slices.
10.Pour the meat mixture on top of the eggplant and potato layer.
11.Create a top layer of the remaining eggplant and potato slices.
12.In a small saucepan, melt butter on medium heat and add all-purpose flour to create a roux.
13.Slowly whisk in warm milk and continue whisking until the mixture thickens.
14.Add nutmeg and salt to the white sauce and then pour it over the top layer of the moussaka.
15.Sprinkle grated cheddar cheese over the white sauce, and then beat two eggs in a bowl before pouring over the cheese.
16.Bake for 45-50 minutes or until the moussaka is golden brown on top.
