Ingredients

1/4 cup lime juice

2 tablespoons olive oil
2 cloves garlic , minced
1 teaspoon ground cumin
1 1/2 pounds beef skirt steak , cut across the grain into 1/2-inch strips
1 yellow onion , cut into 1/2-inch strips
3 red bell peppers , cut into 1/2-inch strips
2 teaspoons vegetable oil , divided , or as needed
Mama's Fab-u-lous Fajitas are a flavorful Mexican dish that originated from the Texan ranch lands south of the border. This dish consists of beef skirt steak marinated in a blend of jalapeno peppers, lime juice, and cumin, then pan-seared with onions and red bell peppers. This dish is perfect for a family dinner and can be served with your favorite toppings such as cheese, guacamole, salsa, and sour cream.

Instructions

1.In a bowl, mix together the lime juice, cilantro, jalapeno pepper, olive oil, garlic, and cumin.
2.In a large plastic bag, place the beef skirt steak strips with half of the lime juice mixture. Marinate for at least 20 minutes in the refrigerator.
3.In a large skillet, heat 1 teaspoon of vegetable oil over medium-high heat. Fry the onion strips for 3-4 minutes until they become translucent.
4.Add the red bell pepper strips to the skillet, mixing the onions and peppers together. Fry for 3-4 minutes until tender.
5.Remove the onions and peppers from the skillet and set aside.
6.In the same skillet, heat 1 teaspoon of vegetable oil over medium-high heat. Remove the beef strips from the marinade and fry for 3-4 minutes until brown and cooked through.
7.Add the onion and pepper mixture back into the skillet with the beef strips. Mix everything together and cook for an additional minute or so.
8.Serve the fajitas hot with your favorite toppings such as cheese, guacamole, salsa, and sour cream.
