10 small red potatoes , peeled & thinly sliced
2 small zucchini , peeled , sliced
7 roma tomatoes , sliced
8 tablespoons grated parmesan cheese
1/3 cup fresh basil , chopped
olive oil
1/3 cup chicken stock or 1/3 cup vegetable stock

Instructions

1.Preheat oven to 375°F.
2.Spray a large baking dish with cooking spray.
3.Place a layer of sliced potatoes on the bottom of the dish.
4.Sprinkle with 2 tablespoons of parmesan and 1 tablespoon of basil.
5.Layer sliced zucchini on top, sprinkle with 2 tablespoons of parmesan and 1 tablespoon of basil.
6.Add a layer of sliced tomatoes, sprinkle with 2 tablespoons of parmesan and 1 tablespoon of basil.
7.Repeat layers, finishing with a layer of potatoes on top.
8.Drizzle stock and olive oil over top.
9.Cover and bake for 45 minutes.
10.Uncover, sprinkle with remaining parmesan and bake for additional 30-35 minutes.
11.Let cool for 10 minutes before serving.
