8 cups water
8 large beets ( canned okay )
1/2 cup sugar
1 medium onion , peeled and cut in half
1 tablespoon salt ( to taste )
1/2 cup lemon juice ( or juice of 4 fresh lemons )
6 small potatoes ( I prefer red-skinned )

Instructions

1.In a large pot, bring 8 cups of water to a boil. Add the beets, sugar, onion, and salt. Cover and simmer for 2-3 hours until the beets are tender.
2.Remove from heat and remove the beets from the pot. Allow the beets to cool and peel them, reserving the liquid.
3.Cut the beets into small pieces and return them to the reserved liquid.
4.Add the lemon juice to the pot.
5.Wash and quarter the potatoes. Add them to the pot and bring to a boil.
6.Simmer the potatoes for 20 minutes until they are tender.
7.Allow the soup to cool and place it in the refrigerator to chill.
8.Serve the soup topped with a spoonful of sour cream.
