Ingredients

6 chicken leg quarters , separated ( family pack size )
1/8 cup cinnamon
2 chicken bouillon cubes
water
1 teaspoon salt ( divided )
1 cauliflower head ( sliced or broken into pieces )
1 eggplant , sliced ( peeling is not necessary )
2 large onions , sliced ( depending on taste )
2 minced garlic cloves
2 tomatoes , sliced
3 cups uncooked rice

Instructions

1.In a large pot, add the chicken legs, cinnamon, bouillon cubes, enough water to cover the chicken, and 1/2 teaspoon of salt. Bring to a boil, then reduce heat and simmer for 45 minutes to 1 hour or until the chicken is cooked.
2.Remove the chicken and set aside. Keep the chicken broth in the pot.
3.In the same pot with the chicken broth, add the sliced cauliflower, eggplant, onions, minced garlic, and tomatoes. Cover the pot and let it simmer for 10-15 minutes or until the vegetables are tender.
4.Add the uncooked rice and 1/2 teaspoon of salt. Stir well and add enough water to cover all the ingredients. Bring to a boil, then reduce the heat to the lowest setting and let it simmer for 30-40 minutes or until all the liquid is absorbed and the rice is cooked.
5.In the meantime, shred the cooked chicken into bite-sized pieces and set aside.
6.Once the rice is cooked, remove the pot from the heat. Place a large platter over the pot and carefully flip it over so that the rice and vegetables come out onto the platter. The chicken should be placed on top of the rice. Serve hot.
