Ingredients

2 cups water
3 cups sugar
1/2 teaspoon cardamom powder
500 g flour
1/2 teaspoon baking powder
250 g dry milk
2 tablespoons anise seed
3 tablespoons slivered almonds , and
pistachios ( to garnish )

Malpua is a popular Indian dessert that is made on special occasions and festivals. It is commonly served with rabri or cream, or on its own, hot from the flame. This sweet delicacy is made of flour, dry milk powder, cardamom, and anise seeds, which are deep-fried in oil, dipped in sugar syrup and garnished with nuts. With its crispy texture and syrupy sweetness, Malpua is a treat that should not be missed.

Instructions

1.In a large bowl, mix together the flour, dry milk powder and baking powder until well combined.
2.Gradually add water to form a smooth batter, and mix until no lumps remain. Leave the batter aside for at least 1 hour.
3.In a deep saucepan, bring sugar and water to a boil, stirring frequently and let this simmer for 15-20 minutes or until the syrup reaches a string consistency. Add cardamom powder, anise seeds and mix well.
4.In another pan, heat oil on medium-high heat. When the oil is hot enough, reduce the heat to medium and use a ladle to pour batter into the hot oil.
5.Cook the pancakes until golden brown, flipping only once. Once the Malpua is cooked, transfer it from oil and place it on a kitchen towel to absorb excess oil.
6.Dip the Malpua hot pancake in the prepared sugar syrup, ensuring that it is coated all over.
7.Serve garnished with slivered almonds and pistachios.
