Tofu satay is a popular dish in Malaysia and other Southeast Asian countries. This vegan version of the classic recipe uses a flavorful peanut sauce that is made with ginger, lemongrass, and other spices. The tofu strips are grilled on skewers, giving them a slightly crispy exterior and a tender, juicy interior. This dish is perfect for a meatless Monday dinner, or as part of a larger spread of Asian-inspired appetizers.

Instructions

1.In a blender or food processor, combine the lemon zest, ginger, chili peppers or hot sauce, and shallots. Pulse until a smooth paste forms.
2.In a medium saucepan over medium heat, heat the vegetable oil. Add the paste and cook, stirring frequently, until it is fragrant and starting to brown, about 5-7 minutes.
3.Reduce the heat to low and add the brown sugar, lemon juice and water, salt, ground coriander, peanut butter, soy sauce, and sriracha or red pepper flakes. Stir until everything is well combined and the sugar has dissolved.
4.Let the sauce simmer over low heat for 10-15 minutes, stirring occasionally, until it thickens slightly. Remove from the heat and let cool slightly.
5.Thread the tofu strips onto metal skewers. Brush the tofu on all sides with the sauce.
6.Preheat a grill or grill pan to medium-high heat. Grill the tofu skewers for 2-3 minutes on each side, or until grill marks appear. Serve the satay skewers hot with extra sauce on the side.
