Ingredients

1/2 green cabbage
1 cucumber
3 potatoes ( boiled in jackets )
3 hard-boiled eggs
1/2 cup bean sprouts ( your choice-lentil sprouts are good , or mung )
1/2 cup green beans
1 cup tofu , cut in 1-inch cubes
1 medium onion
2 tablespoons oil
2 teaspoons ground chili powder
1 cup coconut milk ( or cow milk if you ca n't find coconut-but coconut milk really makes this sauce ! )
4 tablespoons ground roasted peanuts
1 teaspoon lemon juice
salt
sugar

Instructions

1.Wash all vegetables.
2.Shred cabbage.
3.Peel and cut cucumber into rounds.
4.Peel and dice boiled potatoes.
5.Cut hard-boiled eggs into wedges.
6.String beans and chop into 2-inch pieces.
7.Heat oil in a pan. Add onion and chili powder and sauté for a minute.
8.Add coconut milk, peanuts, lemon juice, salt, and sugar. Simmer for 2-3 minutes.
9.Add tofu and heat until just warmed through.
10.Combine vegetables and eggs in a large bowl. Add sauce and mix well. Serve at room temperature.
