Ingredients

3 whole chicken legs
2 tablespoons salt
3 tablespoons curry powder
5 tablespoons curry powder

3 large potatoes , peeled and cut into chunks
oil , for deep-frying
1/2 cup oil
15 chopped shallots
2 large onions , peeled and cut into chunks
2 stalks lemongrass , smashed a bit to release aromatic oils
4 cups coconut milk
1 teaspoon salt

Instructions

1.Cut chicken legs into 3 sections each. Rub with 2 tablespoons of curry powder and 2 tablespoons of salt. Let rest for 30 minutes.
2.In a blender, blend garlic, ginger, and red chilies until smooth.
3.Heat up oil in a wok until hot. Deep-fry the potatoes until golden brown and cooked through. Set aside.
4.Heat up the remaining 1/2 cup of oil in a clean wok until hot. Saute chopped shallots until fragrant. Add blended garlic, ginger, and red chilies. Saute until fragrant.
5.Add chicken and stir-fry until the surface turns opaque. Add onions and stir-fry for 1-2 minutes.
6.Add the remaining 5 tablespoons of curry powder and lemongrass. Mix well.
7.Add coconut milk and bring to a boil. Turn heat to low and let simmer for 15-20 minutes.
8.Add fried potatoes and mix well. Season with 1 teaspoon of salt and serve hot.
