Ingredients

panir or Cotija cheese
1/4 cup cream
2 tablespoons plain goat milk yogurt
chopped fresh cilantro
4 -6 Thai green chili or 1 1/2 serranos , finely chopped
1 cup frozen peas and carrot
1 cup grated peeled and boiled russet potato
3 large cluster tomatoes
4 -5 garlic cloves
2 -3 tablespoons minced ginger ( I like the jarred kind )
4 tablespoons coriander powder
3 tablespoons cumin powder
1 tablespoon turmeric powder
1 yellow onion , finely sliced
1 dash of black jeera powder ( cumin )
red chili powder
1/4 cup cashews , ground into small pieces
1/8 cup raisins
1 teaspoon salt
cornflour or all-purpose flour
vegetable oil ( for frying )
cheesecloth
2 cups water
garam masala
Malai Kofta is a traditional Indian vegetarian dish that comprises soft and tender vegetable dumplings served in a creamy tomato-based curry sauce. Instructions

1.In a bowl, mash together the paneer/cotija cheese, cream, yogurt, cilantro, and green chili. Add frozen peas and carrots, and mashed potato into the mixture, and knead well.
2.Make small balls from the mixture and roll them into cornflour or all-purpose flour. Deep fry them in vegetable oil over medium heat until golden brown and set aside.
3.Blend tomatoes, garlic, ginger, coriander powder, cumin powder, turmeric powder, and red chili powder in a blender or food processor into a smooth puree.
4.In a separate pan, heat oil and add sliced onion, black jeera powder, and cashews. Fry until the onions turn translucent, add the tomato puree, raisins, and salt. Let the mixture simmer for 10-15 minutes until the sauce thickens.
5.Add the fried kofta balls into the sauce and garnish with cream, cilantro leaves, and garam masala. Serve hot with rice or naan.
