1/4 cup dried black lentils ( large variety )
1/4 cup coarse bulgur
1/4 cup short-grain rice
1/2 teaspoon cumin
1 teaspoon salt
4 tablespoons lemon juice

Instructions

1.In a large pot, soak all the beans together in water for at least 4 hours or overnight.
2.After soaking, drain and rinse the beans then add fresh water.
3.Add all the beans to the pot, with enough water to cover them by 1-2 inches above the beans.
4.Boil the beans for 10 minutes over high heat, then reduce the heat to medium-low and continue to cook for 50 minutes.
5.Add the lentils, bulgur, rice, cumin, and salt to the pot and cook for an additional 20 minutes.
6.Stir in the lemon juice and taste to adjust seasoning if needed.
7.Serve hot with a fresh squeeze of lemon juice on top.
