Ingredients

2 -3 liters fresh goats ' milk
1/2 - 1 tablespoon pitia
1/2 cup warm water
1/2 - 1 tablespoon salt
water
coarse salt ( fine will work too )
1 raw egg , washed thoroughly
Feta cheese is a staple in Mediterranean cuisine, and it is widely used in salads, sandwiches, and dishes. Although feta cheese is typically made with sheep’s milk, goat’s milk can also be used, as in this recipe. Making your own homemade feta cheese is simple and allows you to control the ingredients used. This recipe produces a creamy, slightly salty, and tangy cheese that will elevate any dish. The cheese needs to be stored in a saltwater solution, which helps preserve it for up to three months.

Instructions

1.Heat milk over low heat in a pot until it reaches a temperature of 86 °F.
2.Dilute the pitia in warm water and add it to the milk.
3.Stir for a few seconds and turn off heat. Let it rest for 45 minutes.
4.Cut the curd into 2 cm pieces.
5.Drain the whey and place the curd in a cloth-lined colander.
6.Tie the corners of the cloth together and hang the cheese in a cooler place for 6 hours.
7.Dissolve salt in a half liter of water and put it in a container.
8.Gently place the cheese in the container of salt water, ensuring that it is completely immersed in it.
9.Cover the container and let rest for at least 12 hours.
10.Wash the cheese in cold water and place it in a container for storage.
11.Mix an egg with a pinch of salt and brush it over the cheese before serving.

PROS

This homemade feta cheese has a unique flavor and can be used in a variety of dishes such as salads and sandwiches.

It is also free of any additives or preservatives that you may find in store-bought feta cheese.

CONS

The process can take some time, so it may not be feasible if you need cheese quickly.

Additionally, this cheese needs to be stored in a salt- water solution which can be inconvenient for some.
