3/4 lb pork sausage ( can use more or less )
1 small onion , finely chopped
2 tablespoons taco seasoning mix ( can use more or less )
12 corn tortillas
3 green onions , chopped
1/2 cup canned sliced black olives , drained
2 cans diced green chili peppers , drained
2 jars diced pimento pepper , drained
3 cups shredded Mexican blend cheese , divided ( or to taste , or use cheddar cheese )
5 large eggs
2 cups full-fat milk
1/4 teaspoon cayenne pepper ( or to taste )
1 jar salsa

Instructions

9.Top with the remaining 2 cups of shredded cheese.
10.At this point, you can cover and refrigerate the casserole for several hours or overnight before baking, or bake it immediately.
11.Bake for about 45-50 minutes, or until a knife inserted near the center comes out clean and the top is golden brown.
12.Let the casserole cool for a few minutes before cutting into squares and serving with your favorite salsa on top.
