Ingredients

4 -5 large potatoes , peeled
2 carrots
1/3 cup green beans
1 cup peas
10 olives , diced
1/3 cup hearts of palm , chopped
1 jar mayonnaise
1 tablespoon chopped green onion
1 dash olive oil
1 pinch chopped parsley ( optional )
salt and pepper

Instructions

1.Boil the potatoes and carrots in salted water till fork tender.

4.In another pot, boil the green beans and peas separately in salted water till tender.
5.Drain and let cool.
6.In a large mixing bowl add the potatoes, carrots, green beans, peas, diced olives, chopped hearts of palm and chopped green onions.
7.Add a dash of olive oil, mayonnaise, salt and pepper and mix until well combined.
8.Cover and refrigerate for at least an hour before serving.
9.Add a pinch of chopped parsley as garnish if desired.
