2 tablespoons white sugar
1 1/2 teaspoons butter

1 1/2 cups fresh mango , cubed

Instructions

1.Preheat oven to 400°F.
2.In a bowl, mix together olive oil, soy sauce, lemon juice, garlic, red pepper flakes, black pepper, ginger, green onion and salt.
3.Place mahi-mahi fillets in a baking dish and pour marinade over fish.
4.Bake for 15 to 20 minutes, or until fish is firm and opaque.
5.Boil jasmine rice in water with chicken bouillon, butter, coconut milk, white sugar and salt.
6.Combine fresh mango, white sugar and lime juice in a bowl to create mango salsa.
7.Serve mahi-mahi alongside coconut rice and mango salsa.
