Maharagwe is a popular dish in East African cuisine, often served with rice or chapati. Red kidney beans are cooked in a spicy tomato and coconut milk sauce, creating a flavorful vegan meal. The dish is perfect for anyone looking for a hearty and healthy meal, especially for those following a plant-based diet. The dish is easy to make and can be customized to suit individual tastes by adjusting the spices.

Instructions

.Soak the red kidney beans in water overnight or for at least 6 hours.
.Drain the beans and place them in a large pot. Cover the beans with water, about 2 inches above the beans and bring to a boil over medium-high heat.
.Turn down the heat to medium and simmer for about 1 hour or until the beans are tender.

.In a separate pan, heat the oil over medium-high heat. When the oil is hot, add the chopped onions and cook until the onions are soft and translucent, about 5-8 minutes.
.Add the chopped tomatoes and cook for about 5 minutes or until the juices have reduced and the tomatoes are soft.
.Add the turmeric, chili pepper paste (or cayenne pepper), and salt and cook for another 5 minutes.
.Add the cooked beans to the pan with the tomato mixture and stir to combine.
.Add the coconut milk and reduce heat to low. Simmer for about 15-20 minutes, stirring occasionally.
