1/4 cup fresh lemon juice
1 teaspoon bottled chipotle chile sauce
2 tablespoons ground mustard
1/2 teaspoon crushed dried chile pepper
1 teaspoon fresh-ground black pepper
1/8 teaspoon kosher salt
1/2 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon Spanish paprika

Instructions

1.In a medium saucepan over medium heat, add the bacon drippings, onion, garlic, and ginger.

3.Add the ketchup, Worcestershire sauce, soy sauce, brown sugar, balsamic vinegar, lemon juice, chipotle chile sauce, ground mustard, dried chile pepper, black pepper, kosher salt, cumin, coriander, and paprika to the saucepan.
4.Stir well and bring to a boil.
5.Reduce heat to low and simmer for 20-25 minutes, or until the sauce has thickened. Stir occasionally to prevent burning.
6.Remove from heat and let cool before using. Store in an airtight container in the refrigerator for up to 2 weeks.
