1/2 head cabbage , verza
1 head cabbage , Tuscan cavolo nero
3 carrots , chopped
2 celery ribs , chopped
1 medium onion , chopped
1 bunch fresh thyme
10 tablespoons olive oil
3 large potatoes
3 zucchini
500 g beans , soaked 24 hours
300 g canned tomatoes
5 slices bread , stale and Tuscan
1 pinch salt
1 pinch pepper

Instructions

1.Heat a large pot of water over high heat and add the soaked beans.
2.Cook for 45-60 minutes or until tender.
3.In a separate large pot, heat the olive oil over medium heat.
4.Add the chopped onion, celery, and carrots and cook for 8-10 minutes or until the vegetables have softened.
5.Add the potatoes, zucchini, fresh thyme, canned tomatoes, salt, and pepper to the pot and stir well to combine.
6.Finally, add the cooked beans and enough of the bean cooking liquid to the pot to cover all the vegetables and beans.
7.Bring the soup to a boil, then reduce the heat to low and simmer for 45-60 minutes or until all the vegetables are tender and the flavors have melded together.
8.Serve hot, garnished with sliced Tuscan bread if desired.
