Ingredients

1 lamb pluck ( liver , lungs and other organs together )
1 lb green onion
1 bunch anise
3/4 cup rice
2 tablespoons butter
lemon juice
3 eggs
salt and pepper
Magaritsa is a traditional Easter soup in Greece, often served after the fast of Lent. It is made with lamb organs, rice, and onions, and is usually seasoned with lemon juice and anise. The soup has a unique flavour and is enjoyed by many Greeks as part of their cultural heritage. Instructions

1.Clean and wash the lamb pluck, lungs, and organs. Boil them in a large pot with 8 cups of water for about 20 minutes. Then remove and chop them into small pieces.
2.Slice the green onions and finely chop the anise.
3.In a pan, heat the butter and sauté the green onions and anise until softened. Add the rice and stir for a minute.
4.Pour the lamb broth into the pan with the rice. Bring to a boil then reduce the heat and simmer for 15-20 minutes.
5.Whisk the eggs, lemon juice and a cup of the soup broth together in a bowl. Slowly pour this mixture back into the soup pot while constantly stirring.
6.Add the chopped lamb pluck, salt, and pepper. Cook for 5-10 more minutes until the soup thickens slightly. Serve hot!
