1 can sliced peaches in syrup , chopped
1 can chopped plum tomatoes

2 cups lettuce , chopped
2 cups shelled , cooked shrimp

Instructions

1.Heat the olive oil in a large pot over medium heat and add the curry powder. Stir in the onion and garlic and sauté for about 5 minutes or until the onions become translucent.
2.Add the chopped peaches to the pot along with the can of plum tomatoes, ginger, and vegetable broth. Bring to a simmer and cook for about 15 minutes until the peaches and tomatoes have broken down and created a thick soup.
3.Using an immersion blender or transferring to a blender, puree the soup until smooth. Add the cream and continue blending until well combined.
4.Add salt and black pepper to taste and continue cooking for another 5 minutes on low heat.
5.Add chopped lettuce and cooked shrimp to the soup and cook for another 5-7 minutes or until the lettuce is wilted and the shrimp is heated through. Serve hot.
