1 teaspoon minced fresh ginger root
1 tablespoon garam masala
2 teaspoons ground red chile pepper
1/2 teaspoon ground turmeric
salt to taste
2 cups water , divided
3 ripe plum tomatoes , pureed
2 tablespoons tomato paste
3/4 cup grated fresh coconut
1/4 cup coconut milk
1 pod tamarind , soaked in warm water , juice extracted
6 crabs , cleaned

Instructions

1.In a large pot, heat the vegetable oil over medium heat.

3.Add the minced red onions, garlic, and ginger. Cook, stirring frequently, until the onions are soft and translucent.

5.Add 1 cup of water, the pureed tomatoes, and tomato paste. Stir well.
6.Add the grated fresh coconut and remaining cup of water. Stir well.
7.Add the cleaned crabs to the pot and stir gently to combine.
8.Cover the pot and simmer on low heat for 20-25 minutes or until the crab is cooked through and the sauce has thickened.
9.Stir in the coconut milk and tamarind juice. Cook for an additional 5-7 minutes.
10.Remove the pot from the heat and let it cool slightly before serving hot with rice or bread.
