Naan bread is a popular flatbread in India and central Asian countries. This version of the bread uses yogurt instead of water or milk, making it extra soft and delicious. Traditionally baked in a tandoor, a cylindrical clay oven, this recipe uses a standard oven to achieve the same results. Served hot and freshly baked, this bread is a perfect accompaniment to any curry, providing the perfect vessel for mopping up juices. The bread is also a versatile option and can be used as a wrap for kebabs or as a pizza base.

Instructions

1.In a small bowl, mix together the warm milk, sugar and yeast. Leave to stand for 10 minutes to allow the yeast to activate.
2.In a large mixing bowl, combine the flour, salt and baking powder. Make a well in the center of the mixture.
3.Pour the yeast mixture, vegetable oil, natural yogurt and beaten egg into the well. Mix well, until you have a dough.
4.Knead the dough on a floured surface for around 8 minutes until it becomes smooth.
5.Return the dough to the mixing bowl and cover with a damp towel. Leave in a warm place to rise for 1-2 hours.
6.Preheat your oven to its highest temperature, then place a heavy baking sheet or pizza stone on the middle shelf.
7.Knead the dough again for a few minutes, then cut it into 8 pieces. Roll each piece out to create a flatbread.
8.Remove the pre-heated baking sheet from the oven, and place the flatbreads on top. Return to the oven and bake for around 2-3 minutes and then turn them over and cook for another minute or so until they are golden and puffed up.

PROS

Madhur Jaffrey’s Naan bread is the perfect accompaniment to any curry.
Very versatile and can be used as a wrap for kebabs or a base for pizza.

The use of yogurt in this recipe makes the bread soft and it is perfect for mopping up curries.

CONS

Accuracy in measurements is crucial to making this recipe successfully.
If the dough is not kneaded sufficiently, then the bread will not rise and will be tough.

Using too much flour when rolling out the flatbreads can make them dry and tough.

The high temperature of the oven can make the bread crispy, which may not be preferable to everyone.

HEALTH & BENEFITS

This bread is not particularly healthy, but it is a delicious treat that can be enjoyed as a part of a balanced diet. The use of whole wheat flour can increase the fiber content of the bread, and using low-fat yogurt is a healthier alternative.
Yogurt is also beneficial for gut health and general digestion.
