Ingredients

8 ounces shrimp ( peeled , deveined and minced )
2 1/2 ounces water chestnuts ( chopped course )
4 green onions ( white parts only , chopped )
2 lemongrass , centers ( white parts only , chopped ) ( optional )
2 garlic cloves ( chopped fine )
1 tablespoon soy sauce
1 tablespoon Thai fish sauce
4 ounces shiitake mushrooms , chopped
1 tablespoon fresh ginger ( grated )
1 teaspoon red pepper paste
1/4 lime
24 wonton wrappers
2 cups oil ( for frying )
2 tablespoons cornstarch
Mad Dog’s Thai Golden Bags are a popular appetizer that originated in Thailand. These delicious bags are crispy on the outside and have a flavorful filling made with fresh shrimp, shiitake mushrooms, and water chestnuts. Instructions

1.In a large mixing bowl, combine the minced shrimp with the chopped water chestnuts, white parts of green onions, chopped shiitake mushrooms, garlic, soy sauce, Thai fish sauce, red pepper paste, grated ginger root and squeeze lime juice.
2.Mix all the ingredients well.
3.Place a wonton wrapper onto a clean work surface and add a spoonful of filling mixture to the center.
4.Create a small bundle by pulling the four corners of the wrapper to the center and twisting to create a bag shape. Repeat the procedure with the remaining wrappers and filling.
5.Coat the bags with cornstarch and shake off any excess.
6.Heat the oil in a wok over high heat. Once the oil reaches 350°F, carefully fry the golden bags in batches until they turn golden brown, for about 2-3 minutes or until cooked through.
7.Remove the bags with a slotted spoon and let sit onto a paper towel for draining excess oil.
8.Serve hot and enjoy!
