Ingredients

2 cups basmati rice
4 tablespoons ghee
2 large chopped onions
6 chopped garlic cloves
1 kg shelled shrimp
2 teaspoons curry powder
2 cinnamon sticks
2 bay leaves
2 teaspoons baharat ( I used curry powder since we did n't have any baharat but baharat would be much better )
1 teaspoon ground cardamom
4 large peeled and chopped tomatoes
1/4 cup finely chopped fresh coriander ( also known as `` cilantro '' )
2 teaspoons salt
1/4 teaspoon ground black pepper
1 teaspoon turmeric
1 1/2 cups water
1/2 cup almonds
Machbous Rubyan is a popular rice and shrimp dish in Bahrain and other Middle-Eastern countries. It's commonly served at weddings, festivals, and other joyous occasions. The dish is usually made with fresh shrimp and long-grain rice cooked in aromatic spices to enhance its flavor and aroma. The dish gets its name from the method of cooking the rice, where the rice is boiled and then steamed until fully cooked. The result is a fluffy and aromatic rice with a tomato-based shrimp sauce. People in the Middle-Eastern countries also enjoy it with a side of Janah bread and fresh salads.

Instructions

1.Firstly, rinse the basmati rice well and soak it in cold water for 30 minutes.
2.Heat the ghee in a large pot and add chopped onions to it. Fry for a few minutes until the onions turn golden brown.
3.Add the chopped garlic to the pot and fry for another minute.
4.Add the shelled shrimp to the pot along with curry powder, cinnamon sticks, bay leaves, baharat, ground cardamom, chopped tomatoes, finely chopped fresh coriander, salt, ground black pepper, and turmeric. Mix well and cook on medium-high heat for 3-4 minutes.
5.Drain the soaked rice and add it to the pot. Also, add water and bring to a boil.
6.Once the water starts boiling, lower the heat and let it simmer until the rice is fully cooked and the water is absorbed.
7.While the rice cooks, chop the almonds and fry them in ghee until they turn golden brown.
8.Once the rice is ready, remove from heat, and let it rest for a few minutes before fluffing it up with a fork. Garnish with fried almonds before serving.
