Ingredients

8 eggs

1/4 cup green bell pepper , diced
1/2 teaspoon jalapeno pepper , seeded , finely diced
1/3 teaspoon ground cumin
1/4 cup tomatoes , diced
1/4 cup tomato juice
1 tablespoon cilantro , minced

Instructions

1.Whisk the eggs in a medium bowl with salt, pepper, and milk.
2.Heat cooking oil in a non-stick frying pan over medium-high heat.
3.Add the egg mixture to the pan and cook for 1-2 minutes until the egg sets on the bottom.
4.Sprinkle shredded cheese on top of the omelette while it is cooking.

9.Add cooked and shredded beef, tomatoes, tomato juice, and cilantro to the frying pan.
10.Season the mixture with salt and pepper and cook for 2-3 minutes.
11.Spoon the beef mixture on top of the omelette and serve hot.
