Ingredients

4 fresh poblano chiles ( about 3/4 lb )
2 tablespoons unsalted butter
1 teaspoon vegetable oil
1 cup white onion , strips
1/2 teaspoon salt
1/2 fresh serrano chili , minced , including seeds ( seeds can be optional , if you prefer )
3 garlic cloves , minced
1 teaspoon minced fresh oregano or 1/2 teaspoon dried Mexican oregano
6 ounces cavatappi pasta or 6 ounces penne pasta
2/3 cup Mexican crema or 2/3 cup creme fraiche
4 ounces queso fresco or 4 ounces mild feta , crumbled
Macaroni and Cheese is a popular dish that originated in the United States, but with this recipe, the flavors of Mexico are added to it. This recipe features roasted poblano chiles that add a distinct smoky flavor with a mild spice to this classic dish.

Instructions

1.Preheat the broiler.
2.Roast the poblanos under the broiler, turning them until all sides are evenly charred and blistered. Transfer the poblanos to a bowl and cover with plastic wrap, until the steam caused by the heat begins to loosen the skin from the peppers. After about 15 minutes, remove plastic wrap and peel and seed the peppers. Cut the peppers into strips.
3.In a medium frying pan, melt butter with oil over medium heat. Add onions and salt; cover and cook until softened, about 5 minutes. Mix in the poblano strips, minced serrano chili, garlic and oregano and stir until fragrant for about one minute.
4.Bring a large pot of salted water to boil. Add the pasta and cook according to the package's directions, until al dente. Once cooked, drain, and return the pasta to the pot.
5.Add the poblano-pepper mix, crema, and queso fresco to the pot, with the pasta. Using a wooden spoon, stir until well mixed.
6.Transfer the pasta mixture to a medium baking dish until the top is golden and bubbling, about 10 minutes. Serve and enjoy!
