Ingredients

2 cups macaroni
3 tablespoons butter
3 tablespoons flour
2 cups milk
1 teaspoon mild mustard powder

6 ounces mature cheddar cheese , grated
1 egg , beaten
1 tablespoon butter

1/2 cup chopped cooked spinach ( optional , I used frozen , thawed and squeezed dry )
2 -4 tablespoons parmesan cheese ( optional )
salt
pepper
parsley , for garnish

Instructions

1.Preheat oven to 180°C or gas mark 4.
2.Cook macaroni in a large saucepan of boiling salted water until tender, for 10 to 12 minutes. Drain well and return to the saucepan.
3.While the macaroni is cooking, melt the butter in a medium saucepan over medium heat until melted. Stir in the flour and cook for 1 minute.
4.Gradually whisk in the milk until smooth and cooking for 5 minutes.
5.Whisk in mustard powder, cinnamon and 2 ounces of grated cheddar until well combined.
6.Season with salt and pepper to taste.
7.Stir in the beaten egg.
8.In a small frying pan, melt the remaining butter over medium heat.
9.Add scallions, tomatoes, corn kernels and chopped spinach and cook until softened, for about 5 minutes.
10.Combine the macaroni, the vegetable mix, and the cheese sauce and stir well.
11.Pour the mixture into a 1.5 litre baking dish.
12.Top with the remaining cheddar and parmesan cheese if using. Bake for 20-25 minutes or until golden brown.
13.Let stand for 5 minutes and serve garnished with parsley.
