Ingredients

6 oktoberfest pork sausage or 6 your favourite pork sausage
1 tablespoon hot red pepper flakes
2 bay leaves
salt and pepper
1 zucchini , unpeeled and cubed
1 sweet red pepper , seeded and cubed
1 large jalapeno pepper , seeded and cubed
1 ear sweet corn , fresh or frozen , cut in 2 inch lengths
1 medium carrot , cubed
1 peeled sweet potatoes or 1 yam , cubed
2 tablespoons vegetable oil
1 can 2 % evaporated milk , add fresh
2 % low-fat milk , to make 3 cups
1/4 cup all-purpose flour
2 cups low-fat sharp cheddar cheese , shredded
4 ounces light cream cheese , cubed
1/2 teaspoon dry mustard
1/2 teaspoon dry thyme leaves , crushed
1/2 teaspoon pepper
5 cups cooked penne pasta ( we like whole wheat penne )
1 cup fresh breadcrumb
3 tablespoons butter , melted
2 tablespoons parmesan cheese , grated

Instructions

1.Preheat the oven to 400°F.
2.Cut the sausage into 1/2 inch pieces and toss with hot red pepper flakes and bay leaves.
3.In a baking dish, toss together the zucchini, sweet red pepper, jalapeno pepper, sweet corn, carrot, sweet potato or yam, and vegetable oil. Season with salt and pepper. Roast for 25 to 30 minutes until the vegetables are tender and lightly browned.
4.In a saucepan, whisk together the evaporated milk, low-fat milk, flour, cheddar cheese, cream cheese, dry mustard, thyme leaves, and pepper. Cook over medium heat, whisking constantly, for 5 to 7 minutes until the cheese is melted and the sauce is thickened.
5.Cook the penne pasta according to package instructions until al dente. Drain well. Add the sausage and roasted vegetables to the cooked pasta. Pour the cheese sauce over the top, stirring to combine.
6.In a small bowl, combine the breadcrumbs, melted butter, and parmesan cheese. Sprinkle the breadcrumb mixture over the top of the macaroni and cheese.
7.Return to the oven and bake for 20 to 25 minutes until the macaroni and cheese is heated through and the top is golden brown.
