3 tablespoons olive oil
3 garlic cloves , minced
1 small onion , thinly sliced into half-moons
2 large eggs , beaten
3 cups cooked long-grain rice , chilled
1 small green bell pepper , seeded and thinly sliced
1/2 cup corn kernel ( fresh or frozen and thawed )
4 ounces chorizo sausage , thinly sliced
1/2 cup pitted green olives

Instructions

1.In a small bowl, mix together the sugar, fish sauce, and lime juice.

4.Add the beaten eggs and scramble until just set.
5.Add the chilled rice and stir to mix everything together.

7.Add the olives and pour the fish sauce mixture over everything. Stir to combine and cook for another 1-2 minutes, until everything is heated through.
