Ingredients

1/4 rack lamb chop
1/4 cup macadamia nuts , lightly toasted and coarsely chopped
1/4 cup panko breadcrumbs

2 tablespoons olive oil
2 tablespoons full-grain Dijon mustard

1 tablespoon butter
1 tablespoon flour
2 teaspoons shallots , finely chopped
2 teaspoons fresh parsley , chopped
1 bay leaf
1/4 teaspoon dried thyme
salt & fresh ground pepper
1/2 cup beef broth
2 tablespoons dry red wine
couscous , prepared
These lamb chops make an elegant and satisfying meal that's perfect for any special occasion or festive dinner. Instructions

1.Preheat oven to 375 F (190 C).
2.Season lamb chops with salt and pepper.
3.In a bowl, mix chopped macadamia nuts and panko breadcrumbs. Press mixture onto both sides of the lamb chops.
4.Heat olive oil in a large skillet over medium-high heat. Sear lamb chops for about 2-3 minutes on each side or until crust is golden brown.
5.Transfer the skillet into the oven and bake for about 5-10 minutes, until the lamb is cooked to your preferred doneness.
6.While the lamb is baking, prepare the sauce. In a small saucepan over medium heat, melt butter and add flour. Cook for 1-2 minutes, stirring constantly.
7.Add chopped shallots, parsley, bay leaf, thyme, salt, pepper, beef broth, and red wine. Stir well and bring to a boil.
8.Reduce heat and let simmer for 5-8 minutes, or until the sauce is thickened.
9.Remove the bay leaf and pour the sauce over the cooked lamb chops.
10.Garnish with fresh parsley or chives.
