Ingredients

6 boneless skinless chicken breast halves
3/4 cup macadamia nuts
3/4 cup fine dry breadcrumb
1/2 cup all-purpose flour
3 large eggs
salt & freshly ground black pepper
2 tablespoons vegetable oil
2 tablespoons butter
4 large firm-ripe bananas
4 tablespoons chopped cilantro
1/2 lime
2 tablespoons unsalted butter
2 -3 tablespoons chopped crystallized ginger ( or pickled sushi ginger , chopped )
1/4 teaspoon cinnamon
1/8 teaspoon cardamom
2 tablespoons maple syrup ( or brown sugar )
1 pinch salt
This unique take on chicken breasts features a flavorful combination of macadamia nuts and banana chutney. Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.In a food processor, finely grind macadamia nuts.
3.In a shallow dish, combine nuts with bread crumbs. In another shallow dish, season flour with salt and pepper. In a third shallow dish, whisk eggs until frothy.
4.Dip chicken, one piece at a time, in flour to coat, shaking off excess. Dip into egg, then into nut mixture, pressing firmly to adhere. Transfer to a baking sheet.
5.In a large, oven-proof frying pan, heat oil and butter over medium-high heat. Add chicken and cook, turning once, until golden brown, about 6 minutes.
6.Transfer frying pan to the oven and bake until the chicken cooked through, about 15-20 minutes.
7.For banana chutney, cut 3 bananas into small pieces and 1 banana in slices.
8.Melt unsalted butter in a pan, add pieces of bananas and stir. Add chopped crystallized ginger ( or pickled sushi ginger , chopped ), cinnamon, cardamom, maple syrup ( or brown sugar ) and salt. Stir all ingredients and cook for additional 5 minutes.
9.Serve chicken breasts with banana chutney on top. Top with cilantro and a squeeze of lime.
