Ingredients

2 teaspoons olive oil
1 teaspoon butter
3 onions , chopped
3 cloves garlic , minced
1 cup grated carrot
2 teaspoons grated fresh ginger
2 teaspoons curry powder
1 teaspoon ground coriander
1 teaspoon turmeric
1/2 teaspoon tarragon
1 teaspoon lemon juice
2 cups finely chopped macadamia nuts
2 slices white bread
1/2 cup vegetable stock
8 pappadams
1 1 cup sour cream or 1 cup plain yogurt
2 eggs , beaten
1/2 teaspoon seasoning salt
5 lemon leaves or 5 bay leaves , split
Bobotie is a traditional South African dish that originated from the Cape Malay community. It consists of spiced meat baked with an egg and milk custard topping, usually served with rice or bread. In this vegetarian version, macadamia nuts are used instead of meat to create a rich and nutty filling. Instructions

1.Preheat the oven to 350°F.
2.In a large skillet, heat the olive oil and butter over medium-high heat. Add the onions and garlic and cook until softened, about 5 minutes.
3.Stir in the grated carrot, fresh ginger, curry powder, ground coriander, turmeric, tarragon, and lemon juice. Cook for another few minutes until fragrant.
4.Add the chopped macadamia nuts and cook for 5-7 minutes until lightly toasted. While the nuts are cooking, soak the bread in vegetable stock until softened.
5.Mash the bread and add it to the skillet, along with the vegetable stock. Mix well.
6.Pour the mixture into a greased 9x13 inch baking dish. Arrange the pappadams on top.
7.In a separate bowl, mix the sour cream or plain yogurt, beaten eggs, and seasoning salt. Pour the mixture over the pappadams.
8.Place the lemon or bay leaves on top of the custard mixture.
9.Bake uncovered for 25-30 minutes, or until the custard is set and the pappadams are crispy.
10.Remove from the oven and let cool for a few minutes before serving.
