Ingredients

1 cup raw macadamia nuts , chopped
1 1/2 cups self raising flour
1/2 teaspoon baking powder
1 teaspoon ground ginger
1 teaspoon mixed spice
100 g unsalted butter , softened
3/4 cup caster sugar
3 eggs , beaten
1/4 cup buttermilk
8 -10 apricot halves ( fresh or canned )
1/2 cup raw macadamias
1/3 cup rolled oats
1 tablespoon plain flour
1/4 cup brown sugar
1 tablespoon butter , cut in small pieces
Macadamia & Apricot Crumble Cake is a classic Australian dessert that is perfect for any occasion. The rich, buttery cake is studded with crunchy pieces of macadamia nuts and topped with sweet apricots and a crispy crumble topping. It’s a great way to use up fresh apricots when they are in season, and the cake can be enjoyed warm or cold with a dollop of whipped cream or ice cream on top.

Instructions

1.Preheat oven to 180C/350F.
2.Grease and line a 20cm cake tin.
3.Combine the flour, baking powder, ginger, mixed spice and chopped macadamias in a mixing bowl.
4.In another bowl beat the sugar with butter until light and creamy. Add beaten eggs and buttermilk.
5.Fold in the flour mixture and pour the batter into the cake tin.
6.Place apricot halves over the cake batter.
7.Combine rolled oats, macadamias, plain flour, brown sugar and butter, mix well.
8.Sprinkle the crumble mixture over the apricots.
9.Bake for 50-60 minutes or until you insert a skewer in the middle of the cake and it comes out clean.
10.Take the cake out and let it cool down completely before serving.
