Instructions

1.Preheat the oven to 190°C/375°F/gas 5.
2.Butter or oil 12 holes of a muffin tin.
3.Whisk together the brown sugar, eggs, maple syrup, self-raising flour and cinnamon in a large mixing bowl.
4.Stir in the macadamia nuts and bicarbonate of soda.
5.Gradually add the buttermilk, stirring until well combined.
6.Fold in the chopped apples.
7.Pour the mixture evenly into the muffin tin.
8.Bake for 25–30 minutes or until a skewer inserted into the centre of a muffin comes out clean.
9.Let it cool for a while and serve with creme fraiche or mascarpone topped with the spiced apples and nuts.
