Instructions

1.Preheat the oven to 320F (160°C) and grease a 9inch (22cm) cake tin.
2.In a bowl, mix together the flour, cocoa powder and spices until well combined.
3.Add the chopped ginger and macadamia nuts to the dry ingredients and mix.
4.In a saucepan, heat the corn syrup and caster sugar until the sugar has dissolved.
5.Remove from the heat and stir in the vanilla essence.
6.Pour the syrup mixture over the dry ingredients and stir until well combined.
7.Transfer the mixture to the prepared cake tin and bake for 35-40 minutes.
8.Remove from the oven and let rest for 10-15 minutes.
9.Sift icing sugar over the top of the panforte and serve.
