Ingredients

1/4 lb chinese dried bean thread noodles
2 teaspoons sesame oil
3 tablespoons canola oil
4 ounces ground pork
4 garlic cloves , minced
3 inches piece ginger , peeled minced
3 tablespoons chinese red chile bean paste ( douban jiang )
2 tablespoons light soy sauce
3 teaspoons chinese rice wine
1 1/2 cups chicken stock
2 tablespoons dark soy sauce
3 scallions , thinly sliced

Instructions

1.Soak the dried bean thread noodles in cold water for 30 minutes until they soften. Drain and set aside.

4.Add the Chinese red chili bean paste, light soy sauce, and the Chinese rice wine. Continue stirring.

6.Add the soaked noodles into the wok. Stir until the noodles are coated with the sauce and the pork. Cook for an additional 3 minutes.
7.Serve the Ma Yi Shang Shu hot with sliced scallions sprinkled on top.
