Ingredients

3 boneless skinless chicken breasts
150 g button mushrooms , quartered
2 tablespoons sunflower oil
300 ml milk
200 ml chicken stock ( from a cube is fine )
2 tablespoons flour
50 g butter
1 garlic clove , minced
1 tablespoon chopped parsley
fresh grated nutmeg
salt
1 ready to roll shortcrust pastry , rolled fairly thinly
beaten egg , to glaze
Lynsey's Chunky Chicken and Mushroom Pie is a classic British dish that's perfect for a family dinner or Sunday lunch. The chicken and mushrooms are cooked in a creamy sauce, then topped with a crispy golden pastry crust. This recipe is easy to follow and is sure to become a family favourite.

Instructions

1.Preheat your oven to 200C/400F/Gas 6
2.Cut the chicken breasts into large chunks. Heat the oil in a large pan and cook the chicken until browned all over.
3.Add the mushrooms and cook for a further 2 minutes. Remove the chicken and mushrooms from the pan and set aside.
4.Melt the butter in the same pan over a medium heat. Add the garlic and stir for about 30 seconds.
5.Add the flour and cook for a minute, stirring constantly. Slowly add the milk and the chicken stock, whisking continuously.
6.Stir in the parsley and a grating of nutmeg. Continue to cook until the sauce has thickened.
7.Add the chicken and mushrooms back to the pan and stir to coat in the sauce.
8.Spoon the filling into a 23cm/9in pie dish. Roll out the pastry and place it over the top of the dish. Trim the edges and brush with beaten egg.
9.Bake in the oven for 30-35 minutes or until the pastry is golden and the filling is piping hot.
